The course is centered around applying physical and chemical concepts to food materials. It demonstrates how thermodynamics of complex and non-equilibrium systems influences phase transitions and structure formation in foods. Concepts from polymer and colloid science are applied to specific food products and manufacturing processes. The link of physico-chemical properties to sensory perception will be explained.
